Zucchini Bread




2 cups sugar                                                    
1 cup oil                                                          
3 eggs                                                              
2 cups raw grated Zucchini, unpeeled            
2 t. cinnamon                                                  
3 t. vanilla

2 cups flour
1 t. salt
1 t. baking soda
1 t. baking powder
1 cup nuts

Blend sugar and oil: add eggs and vanilla,
then zucchini, cinnamon and sifted dry ingredients.
Add nut last.
Grease and flour 2 large loaf pans.
Bake at 325-350 for 1 hour.
